Functional redirects in preview builds

My team and I have a process of verifying our work in preview builds. If we add redirects those also get verified. We need the redirects working in the preview builds.

We have plans to move all Preview and PR builds to our Edge Network (powered by Fastly) which will fix redirects and make Preview more closely mirror production routing functionality.

Just recently we also run into that issue and first thought it was a bug: https://github.com/gatsbyjs/gatsby/issues/35527

It's quite annoying that redirects cannot be tested on preview builds. In general, there shouldn't be any difference between preview builds and production builds, to be able to verify all changes.
